How to Spatchcock a Chicken: A Step-by-Step Guide |

For many a seasoned home cook, roasting whole chicken may be like a walk in the park; but for the vast many others, me including, roasting chicken instills a certain fear. There is often that most daunting fear that the chook cooks unevenly, with the breast turning into rubber while the drumstick runs pink; the hassle of turning, flipping, and then the basting; oh, and the long wait. For yet others, there is the issue with size - their oven is so petite that it can barely accommodate even a small bird lying on its tummy. Trust me, I have been there, done that. Nothing feels more comforting than a juicy roast chicken on a Sunday, yet for the longest time I have denied myself this ultimate pleasure for fear of failure and hassle.

This was all about to change when I learned how to spatchcock a chicken, which is just a fancy way of saying to butterfly a chicken. By removing the backbone from tail to crown and laying the chicken flat like an open book, you essentially turn something three-dimensional into two, not only creating a more even surface to cook evenly, but also exposing more skin, which crisps up nicely under high temperature - and who doesn't go nuts over crispy skin?! (Those who discard and push the skin to the edge of the plate, pass them over please.)

Another main advantage of spatchcocking a chicken is faster cooking time, whether on the grill or roasting in an oven. Time after time, I will have a perfectly juicy, tender roast chicken ready in just 35 minutes - a whopping third faster than roasting a chicken whole. Additionally, a butterflied chicken makes a wonderful palette for marinating, given the easier access to the cavity and exterior.

A whole chicken from the supermarkets in Hong Kong typically comes with the full package - head, neck, feet and all but the giblets. Spatchcocking is like operating a surgery. For first-timers, the process may get you a wee bit queasy especially with the poor bird staring back at you. Memories of dissecting a dead frog in biology lab may flash back. Go ahead, chop the head off and discard it out of sight to calm the guilt but never do so without giving thanks. If anything, spatchcocking a chicken allows us to be just one step closer to understanding and appreciating the animals that feed us. And if this step hasn't converted you into vegetarianism yet, go on and proceed with a pair of sharp kitchen shears.

Advantages of spatchcocking:
•  More even cooking - consistently tender and juicy
•  Greater surface area for crispy skin
•  Short cooking time - approx. 35 minutes
•  No flipping and turning necessary
•  Great for marinating
•  Perfect for both oven roasting and grilling
•  Excellent for smaller ovens
•  No carving necessary - just section the chicken off when serving
•  You get to practice CPR

At the risk of sounding exaggerated, I dare say learning to spatchcock a chicken was positively life-changing. Consistent, juicy results every time. All my fears for roasting chicken dissipated, and not for a second do I consider going back to roasting a chicken whole, ever.

{ A Step-by-Step Guide: Let's Begin }

Grab your kitchen shears

Pat your chicken dry. Remove and discard the head and neck. Cut feet off at the joint of the drumstick. Set aside.

Cut along the backbone

Starting at the tail, cut along one side of the backbone with kitchen shears. Make the cut as close to the spine as possible.

Remove the backbone

Repeat on the other side of the spine toremove the entire backbone from neck to tail.

Trim and clean

Trim excess fat and clean out the cavity. Reserve backbone and feet for stock or freeze for later use — do not discard!

Flatten the chook

Now, on to my favorite step: "give CPR". With breast side up, press down firmly in the middle of the breastbone to flatten the bird — you will hear a sensational crack. This step is dangerously satisfying.

Get under the skin

For maximum flavor, you want to get your marinade under the skin. Carefully use your finger to create pockets between the skin and the flesh in the breast and thigh. Be careful not to break the skin!

You've just spatchcocked!

Well done — your chicken is now relaxed and ready for the marinade and the grill!

Fissler X SOGO "Go Green" Italian Fair

Filming in progress at the Fissler store, SOGO (CWB)
When German cookware brand Fissler offered me the one-in-a-million chance to star in a two-minute video showcasing their products and my own recipe, I had some sort of idea what challenge I am getting myself into. Design one Italian vegetarian recipe that makes use of two or more of the following products: a pressure cooker, a hand blender, and a frying pan. Sounds simple, eh?

Me with the very patient Director Andrew Ng!
I was thrilled for the vegetarian theme, a challenge I find timely as I increasingly lean towards a plant-based diet. But what is one to do with a pressure cooker, a hand blender, and a frying pan with a meatless recipe? Surely, plain old risottos have been tried and done, pasta has no place in this challenge, and I was certain an everyday Italian tomato sauce wasn't going to make the cut. With no oven available at the site of filming, I have also ruled out the aubergine.

Baffled and tickled, I imagined myself on the set of Guy's Grocery Games, faced with the challenge of creating a winning dish using all the provided equipment with an open pantry. My mind searched for delicacies I have tasted across Italy over the years. It was then when a light bulb flickered in my head. Ah, the arancini, or "little oranges" - the spherical Sicilian cousin of the Roman suppli, a popular street food consisting of a deep fried ball of rice and typically a filling of meat and tomato sauce, peas, and melted mozzarella.

Who doesn't like the sound of delicious, crunchy, balls of flavorsome rice coated in breadcrumbs and a hidden surprise of melted mozzarella that pulls with each bite? With the arancini little known in Hong Kong, I knew the audience would be in for a trip. I henceforth set off my journey of hunting for ingredients overseas, testing and adapting, and frying away at home in the weeks leading to the video shoot.

Click here to check out the post on Facebook Fan Page!
Fun moments from my many recipe trials at home in the weeks leading up to the shoot. And Marsha (right), my trusted neighbor and buddy who is all too happy to be my guinea pig and critic.
Breaking away from tradition, the filling for arancini is only confined by imagination. That's when I thought I am going to make Arancini al Pesto (what's not to love with fresh homemade pesto?) - cook risotto in the pressure cooker (check), make breadcrumbs and pesto with the hand blender (check), and finally fry the balls in the pan (check!!)! The ensuing journey isn't without any hiccups though as I slowly get myself acquainted with the pressure cooker. The result, however, is a foolproof recipe specially developed for the Fissler pressure cooker, a truly magical kitchen companion that cuts cooking time drastically and delivers amazing results.
The filming on March 26 took place at Fissler's Store at SOGO, Causeway Bay, and lasted four hours, with an occasional live audience of shoppers and onlookers!

Thank you HK01 for a special double feature — sharing the dreams, story, and passion of Alvin’s Penthouse Kitchen (and how I managed to screw up the one cake I could even bake blindfolded on the day of photoshoot!!)

Alvin,

Imperfection makes perfection...!

March Birthdays, Boardgames, and a Meat-Free Vegetarian Party!

March is a month with much to celebrate: the return of Spring, the arrival of asparagus, Japanese strawberries, as well as cherry blossoms. It is the month of birthdays when many close friends and myself grow yet another year younger and wiser; it is also when "Alvin's Penthouse Kitchen: the Blog" officially turns three. Yipee!

"How about we throw a barbecue down at the clubhouse?" I blankly suggest as my friends and I brainstorm for activities for the Saturday set aside to celebrate our belated birthdays.

"...Barbecue is cool," Eugene stammers, reluctance escaping his tone, "though I'm only concerned that Kenko and I are both vegetarian, and we might not have much to eat. You know."

Always photogenic, anytime, anywhere
March babies: born on the same day, just years apart!

I can't seem to come up with a good caption for this
Indeed, a typical barbecue can be so meat-centric that it is no more a party to herbivores as a boat trip is to someone who stays away from the sun and sea.

And that is when it all suddenly strikes me. "I will throw an all-vegetarian party at home!" The timing could not have been more perfect. It was as if a fire ignited in me. I was determined to pull together my first ever entirely meat-free feast, fueled by my ever-growing interest and fascination in the world of vegetarian and vegan cooking.

Eugene was thrilled. Rarely ever has he been to home gatherings other than those where vegetarians were no more than an afterthought - an inconvenience even, sometimes - where a cold salad and other usual suspects may be the only option.

Curried Sweet Potato & Pumpkin Lentil Stew: a delicious and inexpensive way to get some fiber-rich lentils into your diet!
I finally cracked the code of latticework with this Wild Mushroom & Gruyère Pie!
Two vegetarians, three March babies, six new and old friends and six happy, full stomachs

Black bean dip is great as finger food at a party!
The thought of a veggie-centric party (complete with boardgames and Pictionary) got us fired up. Kenko insisted on bringing his lunchbox for leftovers, that is if we had any.

I tasked myself to put together a diverse, balanced menu that:
- is simple enough to pull off in a few hours, unless you work turbo speed;
- is fun and fulfilling, potluck style;
- makes use of my existing pantry ingredients;
- is equally appealing to both vegetarians and non-vegetarians

In my moments of brain fart I called up my cousin Kathleen in Toronto, an avid vegan cook herself, for some inspiration. In no time, the menu was set.

Apple and Cabbage Mint Slaw
Black Bean Dip with Blue Chips
Sweet Corn Cake
Curried Sweet Potato and Pumpkin Lentil Stew with Coconut Milk
Wild Mushroom, Rosemary, Gruyere Lattice Pie

The theme of the day was 100% meat-free, but all the more it was about celebrating friendship, and honoring a well-balanced, healthy, and tasty diet. To that we toast!
Stay tuned for recipes to come!

Ditch the Restaurants, Enjoy Brunch in Bed this Valentine's Day!

Happy Valentine's Day! A day anticipated by most, dreaded by some, but nevertheless a day filled with love and cliché - so why not stir things up a little this year?

Valentine's Day is typically a time when couples feel obliged to deck out and dine out in some fancy restaurant (with reservations made weeks in advance), inevitably bound by predictable set menus that take advantage of defenceless diners (let's sneak a strawberry into the glass of bubbles and a few shavings of truffle somewhere). Guys' wallets, in most instances, bear the brunt of this one night-out's romantic assault, not to mention the prerequisite "surprise" gift for the beloved. Valentine's Day is a social-commercial institution, really. So this Valentine's Day, why not shake things up a little?

A double-punch in omega 3!
To make things better, Valentine's Day this year falls on a weekend. Sunday brunch in bed, anyone? In my book, the little effort and thought put into preparing food for a loved one exudes more romance than a night out can ever provide. Plus, you get to indulge in snuggling without judgamental eyes snooping in scrutiny.

This Valentine's Day I prepared something simple and foolproof, yet does not fall short from your average brunch out in your favorite cafe. All of the ingredients happen to be readily available in my pantry, saving me a last minute trip to the grocers. Whether paired or single, enjoy a chill morning in, or even surprise your family with some love!

A feast to the eyes, most certainly a party for the belly - do something special for Valentine's Day

One more night to go... See you all tomorrow!

Desserts & Sweets Charity Food Fair @ CXC | 11-2pm | Oct 16

It has been a very busy two months at the Penthouse Kitchen (excuse my absence from posting much) prepping and planning for the Desserts & Sweets Charity Food Fair event that is to take place tomorrow at work. All proceeds will go to Sunnyside Club that supports mentally and physically disabled children in Hong Kong.

I have recruited dear friend Kylie who kept me sane and became a very deft kitchen "dance partner" as we flitted about the cramped and narrow kitchen space. All our efforts culminated these two days with the oven running round the clock, churning out batch after batch of scones that filled my entire penthouse with heavenly, buttery, exotic aromas.
My biggest thank you to Kylie, my unconditionally cheerful partner in crime that kept both us going!

Find out the FIVE FLAVORS featured tomorrow and bag some home!
Cheddar Apple Rosemary is apparently Kylie's favorite
Hundreds... and another hundred more to go

Miss the event? Want some scones? Place an order! Simply send me a message on my Facebook Fan Page!!
